What clients appreciate most: as both a Registered Dietitian and a Certified Chef, Michelle Moreau can help them with what to eat, as well as how to prepare it. Many clients rely on restaurants for most meals, and Michelle’s professional kitchen knowledge proves invaluable at identifying and explaining the potential food and cross-contamination issues diners can face. By using a personalized approached to nutritional counseling, Michelle’s nutrition recommendations take into consideration a client’s lifestyle and personal interests, which in turn helps clients achieve better success at reaching their nutrition goals. Her varied background provides a strong foundation to draw from when addressing the nutritional issues that many of her clients face.
While at the Hilton Head Health Institute (H3), America’s premier weight-loss health spa located in Hilton Head Island, South Carolina, Chef Michelle Moreau had the distinct pleasure and honor of helping others during their quest to make healthy lifestyle changes for

themselves. She prepared healthy, balanced meals for H3 guests and staff and designed menu items that were flavorful, nutritent-dense and low-calorie. Michelle also developed several popular gluten- and dairy-free menu items for many guests with food intolerance and allergy. It was her work with the amazing clients at H3 that motivated her to create the healthy recipe portion of this website.
Chef Michelle also had the extraordinary opportunity of preparing meals for a dozen cast members of Heavy during filming of their personal transformations. Each of their courageous stories aired during the premier season of the television series Heavy on A & E network. Heavy is a reality drama which focuses on real life extreme transformations and weight loss.
At Tulane University School of Medicine in New Orleans, Louisiana, Michelle had the distinct honor to work alongside Tulane’s committee for curriculum development of the Goldring Center for Culinary Medicine, a teaching kitchen focused on culinary nutrition. Beginning with the 2012-2013 school term, these “hands on” cooking classes are required study for every single Tulane School of Medicine medical student. This commendable, vanguard program recognizes food as medicine, and many other medical school programs are now also including this program in their curriculum.
At Johnson & Wales University in Providence, Rhode Island, Michelle received her formal Culinary Arts training and Culinary Nutrition education. There she was also president and

founder of Sans Gluten, the University’s first Gluten-free baking and pastry club dedicated to the education of medical nutrition therapy behind the gluten-free diet, the science behind gluten-free food product development, and proper HACCP procedures of food preparation for persons with food intolerance/allergies. The club still runs strong today.
Michelle’s Dietetic Internship was with NewYork-Presbyterian Hospital, the University hospital of Columbia and Cornell that’s ranked the #1 hospital in New York and among the top 7 hospitals in the nation. She completed her Nutrition Fellowship at Columbia University Medical Center, which focused on medical nutrition therapy and education for cardiac, renal and diabetic patients, and where she worked closely with Columbia’s nationally recognized Cardiology (#3), Nephrology (#3) and Endocrinology (#6) teams.

Michelle was an invited participant to the 7th Annual Celiac Disease Preceptorship program, an intensive training course for medical professionals, at the University of Chicago Celiac Disease Center, Chicago, IL.
In 2020, Michelle completed her AND Certification in Chronic Kidney Disease Nutrition Management.
Professional affiliations include American Culinary Federation (ACF) and the Academy of Nutrition and Dietetics (AND), as well as the Dietitians in Integrative and Functional Medicine (DIFM), Food and Culinary Professionals (FCP), Medical Nutrition Practice Group (MNPG) and Weight Management (WM) AND Interest Groups.
